89Besserat de Bellefon Cuvée des Moines (Sparkling white)Creamy golden yellow. Autolysis, marmite, twiglets and nuts on the nose with some soft honey and dried fruit notes creeping in on the finish. Honeyed biscuits continuing on the palate with savoury twiglets, roasted almonds and umami notes. Incredibly intense phenolic acidity, almost tannic with high chalky, mineral acidity. There is a ripe intensity, but this is not a rich, complex wine. We liked the funkiness and mature tertiary notes.
