Château des Bormettes Instinct Parcellaire (Rosé) 2025 - Highly RecommendedCreamy water white peach, almost blanc de noir-esque. Delicate peach aromas with pretty white flowers. The palate is surprisingly intense and weighty with vibrant, almost searing chalky acidity. Red berries, sour raspberries, and fresh vibrant red fruit are joined by crisp, mineral green apples. Shows textured phenolics and a whisper of fresh thiol notes. Not overly complex, but the bold, confident weightiness is very appealing. Elegant, beautifully lacy, and possessing floral charm. More of a crisp white than a fruit-driven rosé, but delicious, showing lots of potential to take on more of a gastronomic element and perhaps even a little bit of richer ageing.
